Makes 2 crepes: 1 egg 2 Tablespoons flour 1 Tablespoon milk 1 teaspoon butter ¼ teaspoon sugar dash of salt |
Makes 4-5 crepes: 1 egg ¼ cup flour 1/8 cup milk 1/8 cup water 1½ teaspoons butter ½ teaspoons sugar 1/8 teaspoon salt |
Mix all ingredients well. Melt 1 Tablepoon butter in crepe pan or skillet. Pour scant ¼ cup batter into hot skillet. Cook until firm enough to turn. Turn carefully. Can be kept in warm oven until ready to fill.
Fill with any combination of vegetables, meats, sauce. If desired, top with cheese sauce.
Cheese Sauce for 2 Crepes:
2 teaspoons melted butter
Stir in 1 Tablespoon flour
Add ¼ cup milk and ¼ cup water
grated or diced cheeses and salt to taste.
