Split Pea Soup


16 oz. dried split peas
1 lb polish sausage, sliced in ¼" slices
2-3 potatoes, cubed

Soak peas in water overnight; drain. Place in crock pot or dutch oven. Add sausage and potatoes. Season with salt and pepper. Cover with water. Cook on low for at least 8 hours. The more you cook it, the thicker (thus better) it gets. This soup is even better the second or third time around.
