Oatmeal Coffee Cake


1½ cups uncooked oatmeal
¾ cup butter
2¼ cups boiling water
1½ cups brown sugar
1½ cups granulated sugar
3 eggs
2 cups flour
1 rounded teaspoon salt
1½ teaspoons cinnamon
1½ teaspoons vanilla

Icing:
6 tablespoons butter
½ cup sugar
¼ cup cream or evaporated milk
1 teaspoon vanilla or your favorite liquor

Stir together oatmeal, butter and water. Let stand for 20 minutes, covered. Mix together the remaining ingredients. Blend the two mixtures and beat until smooth. Pour into greased bundt pan and bake for 50-60 minutes (or until cake tester comes out clean) at 350°. Cool 10 minutes in pan before inverting on a serving plate.

Combine icing ingredients and bring to a rolling boil. Boil for one minute. Cool ten minutes. Spread on warm cake.
