This is the recipe as our mother used it:
Slice green tomatoes ¼" thick. Cover with boiling water. Let stand a few minutes, then drain.
Sprinkle flour & sugar on unbaked pie shell. Layer slices of tomato. Pour ½ cup sugar over tomatoes then sprinkle lightly with brown sugar. (Put a little flour in the sugar.) Sprinkle 2 Tablespoons of lemon juice or vinegar (or 1 T. each) over tomatoes. Sprinkle w/ cinnamon & dot with butter. Add lattice strips of pie dough, if desired.
Bake at 450° for 10 minutes. Reduce heat to 350° and continue baking 30 minutes or until done.
