Great Potato Salad #1


8 oz. sour cream
1½ cups Hellmann's mayonnaise
1½ teaspoons prepared horseradish
6 to 8 green onions with tops, finely chopped
¾ cup finely chopped celery
1 cup finely chopped fresh parsley
8 to 9 medium red potatoes, boiled, peeled (if desired), and cubed
3 to 5 slices bacon, fried crisp and crumbled

Blend sour cream, mayonnaise, and horseradish to make dressing. Mix onion, celery, and parsley. In serving dish, layer in order half of potatoes, dressing, and celery mixture. Repeat layers once. Sprinkle with bacon bits.

Serves 8 to 10
