German Potato Salad

6 medium potatoes
2 ribs of celery - chopped
1 small onion - chopped
½ cup parsley - chopped
½ cup oil
¼ cup vinegar diluted with ¼ cup water
1 teaspoon salt
2 tablespoons sugar
pepper to taste
1 or 2 hard boiled eggs

Boil potatoes until tender (30-40 minutes). Peel and cut in thin slices. In a large dish, put a layer of potatoes. Sprinkle with salt, pepper, sugar and some of the celery, onions and parsley. Sprinkle a little oil and vinegar over it. Repeat a layer of potatoes, etc. until all ingredients are used up. Grate the egg over the top and sprinkle with paprika. Garnish with sprigs of parsley.
