Buttermilk Pie


one 9" unbaked pie shell, chilled
1/3 cup butter
1-1/3 cups sugar
3 eggs
2/3 cup buttermilk
2 teaspoons vanilla

Beat butter and sugar until creamy. Beat in eggs one at a time. Slowly mix in buttermilk and vanilla. Pour into shell and bake at 350° for 30 minutes until quite firm and lightly browned.

Note: I have trouble getting the pie to set without burning the crust, so I now bake it at 325° and watch it closely after 30 minutes.
